Secrets to BBQ Success
1. Use only the highest quality meats.
2. Bring meat to room temperature prior to cooking.
3. Use quality seasonings.
4. Check the temperature of your grill prior to placing meat on the grill, you
want to hear the sizzle.
5. Raise your grate when cooking over flame,
lower your grate when cooking over coals.
6. Turn meat only once, onto a clean hot spot
on grill, halfway through cooking time.
7. Use meat thermometer to check
internal temperature of meat
to check for doneness.
8. Remove meat from grill when internal
temperature is 5-10 degrees
below desired temperature.
9. Let meat rest, covered, on
a warm platter prior to cutting.
10. Have all of the other meal
components ready so you can
plate the meat while it is still hot.
